Cut from Prime Rib, these are impressive to serve and fun to eat. Grill, roast or braise.
Cooking Methods
OVEN ROAST | Recommended
1. Season rack of ribs.
2. Roast on rimmed foil-lined baking sheet in 250°F oven for 2 to 3 hours until crispy.
3. Grill or broil ribs using medium heat for 5 to 10 minutes, brushing all over with barbecue sauce and turning occasionally.
BRAISING | Alternate
1. Season ribs all over.
2. Place in a heavy Dutch oven, and add enough broth or red wine to just cover the ribs.
3. Simmer, covered, on stove top or in 325°F oven about 90 minutes until fork-tender.
TIPS
Before cooking, coat Beef Back Ribs with a dry or wet rub and let them rest 2 to 3 hours to develop flavour.
You can use a bottled smoky-flavoured barbecue sauce instead of making one from scratch for basting and dipping if you like. You’ll need 2 to 3 cups (500 to 750 mL).
A rack of ribs usually comes as a set of 7 ribs (about 1 lb/500 g).
